I'm trying to figure out what kind of gouge I should get if I already have some decent carving knives.

I'm a beginner to woodcarving, and want to focus on making little figures, possibly a chess set. I already have some knives, but am looking into a gouge, or maybe a flat chisel? I'm not sure what numbering to do. I was looking at pfiel palm gouges, and I think I'm deciding between #3 and #5. Also, what mm measurement should I get? 12mm? I'm not exactly sure what that refers to.
