What type of wood wood be best? Father in law carved this pipe and was thinking of getting him some more carving wood and maybe a set of tools. Any recommendations would be greatly appreciated.

Gents, I'm new to wood working. Like birdhouse new. But I have this 13'x4' slab of redwood that I am looking forward to carving into the Sons Of Anarchy table. If you guys have any tips for starting a daunting task such as polish before or after cutting in to the wood, or even what kind of treatment to use for redwood I'd appreciate it.
